Weekly Menu and Grocery List

Here is the menu and list for this week!  Miss a menu?  If you look at the sidebar on the right, you'll see that the lists and menus from previous weeks are still listed.  Make sure you read my "hints" below.  This week is filled with recipes that could potentially stock your freezer for future meals.

Chicken Enchiladas

Hints for this Week:

  • Chicken Cacciatore Pronto can easily be made with boneless skinless chicken breasts if you prefer white meat.
  • BUY THE PORCINI MUSHROOMS for the Chicken Cacciatore. They are usually in plastic containers near the fresh herbs in the produce section. A little pricey, but worth it.  This is an easy but delicious dish. I love making it.
  • The Pasta E Fagioli soup makes a lot! Either have people over or freeze half for one of those hectic nights!
  • Buy a small bottle of sriracha sauce or sambal ooleek sauce for oriental dishes.  It keeps forever and really does deepen the flavor of the pork tenderloins.  You can leave it out, but I think building up a stash of condiments makes it easy to pull together any recipe quickly. Invest in new exciting flavors!
  • Buy the 4 tenderloins...cook two, bag two for the freezer!
  • Use ground coriander for marinade, just sprinkle over.
  • I add more cheese to the enchiladas because that is who I am...but this is a great, low cal recipe for a decadent favorite.
  • Either cook the chicken breasts and cube up for the enchiladas or shred up a rotisserie chicken.
